This is a quick, Fried Savory Doughnuts recipe from Türkiye! We make these doughnuts for unexpected guests, hungry kids back from school if we don’t have bread at home. Simple yet everyones favorite with a good breakfast and tea.

We Turks love breakfast time. The simplest breakfast mostly have at least olives, 1-2 kinds of cheeses, cucumber tomatoes, eggs, a jam, fresh bread and tea. It is common to see 2-3 kinds from everything as well 🙂 And to accompany all those breakfast goods we get breads and different breads and pastries like Turkish Gozleme Recipe With Cheese Spinach Filling or Turkish Pita Bread “Gobit” or the most famous one Simit Recipe – All You Need To Know “Hamur kızartması” (Fried Savory Doughnuts) or “pişi” is also one of them.

There are basically two versions for fried doughs. First one is without yeast, “mayasız pişi” we use baking soda instead which gives perfect results in no time. The second one is this one, which we use yeast dough. I made it an hour before the breakfast but you can simply prepare the dough in the evening and let is rise in the fridge. Take it out in the morning, shape and let it come to at room temperature before you fry it.

Ingredients For Fried Savory Doughnuts:

  • 1 cup lukewarm water
  • 3 cups all-purpose flour
  • 1 tsp double acting dry yeast or regular dry yeast or 20gr. fresh yeast ( use according to package directions )
  • 1 tsp salt
  • 1 tsp sugar ( I forgot to add but it was still good )
  • Vegetable oil to deep fry and to drizzle the plate to shape

Preparing The Dough:

  • In a mixing bowl add 1 cup lukewarm water. Add the yeast according to your package. Since I used double acting instant yeast I mixed it with the flour. Add 3 cups flour, the yeast and begin to mix.
  • After the mixture begins to form a dough add the salt (So the salt doesn’t touch to the yeast) Continue to knead, sprinkling more flour if needed until it is somewhat stick soft dough. Shape into a ball and transfer it to oiled bowl. Cover and let it rise until doubled.
  • If you want to shorten the time you can use double boiler method. Add some water and heat up until you get a steam. Place to bowl with the dough and let it rise.

Shaping & Frying:

  • Heat up vegetable oil in a frying pan.
  • Get a plate or serving plate and drizzle some vegetable oil and spread with your hands. Get a piece about less then a mandarine size from the dough without disturbing the risen dough. You can help cutting with kitchen seazor or knife or dough cutter.
  • Stretch the dough and open up like to have a disk shape. You can either do it with your hand or with the help of the oiled plate. (Watch the video for details)
  • Fry the shaped doughs in hot oil, turning from time to time until golden color. Continue until you finish all the dough.

We make “Hamur Kızartması” or “Mayalı Pişi” in any time of the day as for breakfast, or lunch, tea time. Best way to serve is some cheese, olives, tomatoes, cucumbers and of course Turkish tea.
