Looking for recipes for stale bread? Tirit / Thareed is an authentic Turkish / Ottoman recipe that turns stale bread into Kebab! It is a dish made by putting toasted or stale bread in broth, topped with meat chunks or mınced meat.
We have many different “Tirit” dishes throughout Anatolia. I am going to show Kastamonu Tiridi that I learned from my mom.

Bread has always been the most basic food in Anatolian culinary culture since ancient times. It is a sacred blessing for all cultures with symbolic meanings attributed to it, beyond being the staple food of the table.

Ancient stale bread recipes tirit / thareed prepared in different forms.

The type of bread used in Tirit recipes is dry and durable leavened or unleavened bread such as thin yufka sheets. As for the meat type, you can use any kind: Beef, lamb, chicken, even duck.

We have many different tirit dishes throughout Anatolia like Konya tiridi and on the Black Sea coast, Kastamonu which is my father’s hometown.

Turn stale bread into kebab with dish ancient tirit / thareed recipe.

Ingredients For Turkish Tirit / Thareed

  • For the ground beef topping
  • 400gr. ground beef
  • 2 medium size onion
  • 3-4 tbsp olive oil
  • 1 tbsp butter
  • Salt, pepper, and paprika to taste
  • 1+1/2 cups to 2 cups of water
  • For the base: 300gr. stale bread or pide, cut into cubes
  • 1 tbsp butter to toast bread
  • For the paprika sauce:
  • 1 tsp sweet or hot paprika
  • 2 tbsp butter
  • To drizzle on top: About 2 cups of yogurt

Preparing Stale Bread Base

  • For the base, use any stale bread. If your bread is soft or to give extra taste you can toast it.
  • First cut them into cubes.
  • Then toast the pieces of bread with some butter until you have some golden spots. Turn off the heat and keep it ready at the side.

Cooking Ground Beef Topping

  • Meanwhile, make the ground beef topping. Sauté the ground beef in vegetable oil and butter mixture. Make a well in the center and add diced onions.
  • Add salt, paprika, and black pepper to taste. Continue to sauté for about 4-5 minutes.
  • Add about 1+1/2 to 2 cups of water, simmer for 2-3 more minutes and turn off.

Assembling The Tirit (Best recipe for stale bread)

What is on my memory besides the delicious taste is, that my mom was serving tirit in a big wide bowl, and we were eating right from there with spoons. It was making us get together at the table just like in Anatolia or even back in Ottoman times how it is served.

  • First spread the toasted pieces of bread into a serving plate.
  • Then spread the ground beef base on top of them. Make sure most of the bread pieces are wet with the sauce.
  • Pour the yogurt sauce over the minced meat sauce and bread base.

Cooking The Paprika Sauce

  • For the paprika sauce, melt some butter with paprika.
  • Cook the sauce until a delicious smell comes from the sauce.
